Ingredients (Makes about 30 dumplings):
- For the Dumpling Wrapper:
- 2 cups all-purpose flour
- 1/2 cup warm water (add more as needed)
- A pinch of salt
- For the Filling:
- 1 1/2 cups fresh chives (finely chopped)
- 3 large eggs (scrambled)
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1/2 teaspoon salt (to taste)
- 1/4 teaspoon white pepper
- 1/2 teaspoon sugar (optional, to balance flavors)
Instructions:
1. Prepare the Dumpling Wrappers:
- In a large bowl, combine the flour and a pinch of salt.
- Slowly add the warm water while mixing, until the dough starts to come together.
- Knead the dough on a clean surface for about 8-10 minutes until smooth and elastic.
- Cover the dough with a damp cloth and let it rest for at least 30 minutes. This will make it easier to roll out.
2. Prepare the Filling:
- Heat a little oil in a pan and scramble the eggs. Once cooked, remove from the pan and set aside to cool. Then, chop the eggs into small pieces.
- In a large mixing bowl, combine the chopped chives, scrambled eggs, soy sauce, sesame oil, rice vinegar, salt, white pepper, and sugar (optional). Mix well.
- Set the filling aside while you shape the dumplings.
3. Shape the Dumplings:
- Divide the rested dough into small pieces (about the size of a walnut).
- Roll each piece into a small ball, then flatten it with a rolling pin into a round disc (about 3 inches in diameter).
- Place a teaspoon of the chive and egg filling in the center of each wrapper.
- Fold the wrapper over the filling to create a half-moon shape. Pinch the edges tightly to seal. You can also pleat the edges for a decorative look.
4. Cook the Dumplings:
Boiling:
- Bring a large pot of water to a boil. Add the dumplings and stir gently to prevent sticking.
- Once the dumplings float to the surface (about 5-7 minutes), add a little cold water to the pot.
- When the water comes back to a boil, add more cold water and repeat once more. This helps cook the dumplings evenly.
- After the dumplings are fully cooked (about 10 minutes in total), remove them with a slotted spoon.
Pan-Frying (Potsticker Style):
- Heat a non-stick skillet over medium heat and add a little oil.
- Place the dumplings in the pan and fry for 2-3 minutes, or until the bottoms are golden brown.
- Add about 1/4 cup of water to the pan and immediately cover with a lid to steam the dumplings. Let them steam for 5-6 minutes, until fully cooked.
Steaming:
- Place the dumplings in a steamer basket lined with parchment paper or cabbage leaves.
- Steam over boiling water for about 8-10 minutes, until the dumplings are fully cooked.
5. Serve:
- Serve the Chive and Egg Dumplings hot with a dipping sauce made of soy sauce, rice vinegar, and a few drops of sesame oil.
- You can also add some chili sauce for a spicy kick.
This Chive and Egg Dumpling recipe is quick, delicious, and perfect for those who want a lighter, vegetarian option. Enjoy!
