Crispy and Flaky Chinese Hand-Pulled Flatbread

Shouzhua Bing (手抓饼) is a popular Chinese street food, often referred to as a “hand-pulled flatbread.” It’s crispy on the outside, soft on the inside, and can be enjoyed on its own or with various fillings. Here’s a simple recipe to make this delicious dish:

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup warm water
  • 1/2 tsp salt
  • 1 tbsp vegetable oil (for dough)
  • 2 tbsp sesame oil (for brushing)
  • Additional oil for frying
  • Optional fillings: sliced scallions, egg, or your choice of meat

Instructions:

  1. Make the Dough:
    • In a bowl, mix the flour and salt.
    • Gradually add the warm water while stirring until the dough starts to come together. You may need to adjust the water slightly, depending on the flour type.
    • Knead the dough on a lightly floured surface for about 10 minutes, until smooth and elastic.
    • Cover the dough with a damp cloth and let it rest for 30 minutes.
  2. Divide and Roll:
    • After resting, divide the dough into small portions (about 4-6 pieces, depending on the size you want).
    • Roll each portion into a ball and then flatten it into a round disc about 4-5 inches in diameter.
  3. Apply Sesame Oil:
    • Brush each disc with a little sesame oil. This helps achieve the flaky, layered texture.
    • If you want to add fillings (like chopped scallions), sprinkle them on top of the dough before rolling it up.
  4. Roll and Shape:
    • If adding fillings, fold the dough over the filling and roll it into a cylinder.
    • Then, coil the cylinder into a spiral shape. Flatten the spiral with your palm or rolling pin, gently pressing it down.
  5. Cook the Shouzhua Bing:
    • Heat a non-stick skillet or griddle over medium-high heat. Add a little oil.
    • Place the rolled dough into the pan and cook for 2-3 minutes on each side, pressing it down occasionally to ensure it cooks evenly.
    • When golden and crispy on both sides, remove from the pan and slice into pieces.
  6. Serve:
    • Serve hot as a snack or a meal, paired with a dipping sauce, or filled with your favorite ingredients like eggs, meats, or vegetables.
