How to Make Refreshing Chinese Liangpi (凉皮) Noodles

凉皮 (Liángpí) is a popular Chinese dish from the Shaanxi province, often served as a refreshing, savory snack or appetizer. It consists of wide, chewy noodles made from wheat or rice flour, topped with a tangy, spicy sauce, and garnished with fresh herbs and vegetables. Here’s how to make this delicious and refreshing dish at home.

Ingredients:

For the Noodles:

  • 200g wheat starch or rice flour
  • 200ml water
  • A pinch of salt

For the Sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon Chinese black vinegar (or regular vinegar)
  • 1 tablespoon sesame oil
  • 1-2 tablespoons chili oil (adjust to spice preference)
  • 1 teaspoon sugar
  • 1 garlic clove, minced
  • 1 tablespoon chili flakes (optional for extra spice)
  • 1 teaspoon ground Sichuan peppercorns (optional for a numbing effect)

For Garnishing:

  • Cucumber (julienned)
  • Carrot (julienned)
  • Fresh cilantro (chopped)
  • Chopped peanuts or sesame seeds (optional)
  • Bean sprouts (optional)
  • Sliced green onions (optional)

Instructions:

1. Make the Noodles:

  • In a mixing bowl, dissolve the wheat starch or rice flour in water and stir well to make a smooth batter. Add a pinch of salt to the mixture.
  • Pour the mixture into a shallow, heat-resistant dish (about 8-10 inches in diameter), smoothing the top with a spatula.
  • Fill a large pot with water and bring to a boil. Place the dish with the batter into the steamer or on a steaming rack above the boiling water. Cover and steam for about 10-15 minutes until the surface of the mixture turns firm and translucent.
  • Let the steamed layer cool for a few minutes. Then, use a knife or spatula to lift the noodle layer from the dish, and cut it into wide strips.
  • Repeat the process to make more layers if needed, depending on how much you want to serve.

2. Prepare the Sauce:

  • In a bowl, mix together soy sauce, vinegar, sesame oil, chili oil, sugar, minced garlic, and Sichuan peppercorns (if using). Stir to combine until the sugar is dissolved and the sauce is well mixed.
  • Adjust the seasoning as per your taste preference, adding more chili oil or vinegar for extra spice or tanginess.

3. Assemble the Liángpí:

  • Once the noodles have cooled to room temperature, place them in a large bowl.
  • Pour the sauce over the noodles, making sure to coat them evenly.
  • Add the julienned cucumber, carrot, and fresh cilantro to the dish.
  • If desired, sprinkle some chopped peanuts or sesame seeds, and top with bean sprouts or sliced green onions for extra texture and flavor.

4. Serve:

  • Toss

the noodles and toppings together to mix the sauce with the vegetables and noodles evenly.

  • Serve immediately as a refreshing cold dish or refrigerate for a few hours for a chilled version.

Tips:

  • If you want a thicker sauce, you can add a bit of cornstarch mixed with water to the sauce while heating it.
  • You can adjust the level of spiciness by adding more or less chili oil, depending on your preference.
  • If you don’t have wheat starch, you can use rice flour, but the texture will be slightly different—more tender and less chewy than the wheat version.
