Shouzhua Bing (手抓饼) is a popular Chinese street food, often referred to as a “hand-pulled flatbread.” It’s crispy on the outside, soft on the inside, and can be enjoyed on its own or with various fillings. Here’s a simple recipe to make this delicious dish:
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup warm water
- 1/2 tsp salt
- 1 tbsp vegetable oil (for dough)
- 2 tbsp sesame oil (for brushing)
- Additional oil for frying
- Optional fillings: sliced scallions, egg, or your choice of meat
Instructions:
- Make the Dough:
- In a bowl, mix the flour and salt.
- Gradually add the warm water while stirring until the dough starts to come together. You may need to adjust the water slightly, depending on the flour type.
- Knead the dough on a lightly floured surface for about 10 minutes, until smooth and elastic.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- Divide and Roll:
- After resting, divide the dough into small portions (about 4-6 pieces, depending on the size you want).
- Roll each portion into a ball and then flatten it into a round disc about 4-5 inches in diameter.
- Apply Sesame Oil:
- Brush each disc with a little sesame oil. This helps achieve the flaky, layered texture.
- If you want to add fillings (like chopped scallions), sprinkle them on top of the dough before rolling it up.
- Roll and Shape:
- If adding fillings, fold the dough over the filling and roll it into a cylinder.
- Then, coil the cylinder into a spiral shape. Flatten the spiral with your palm or rolling pin, gently pressing it down.
- Cook the Shouzhua Bing:
- Heat a non-stick skillet or griddle over medium-high heat. Add a little oil.
- Place the rolled dough into the pan and cook for 2-3 minutes on each side, pressing it down occasionally to ensure it cooks evenly.
- When golden and crispy on both sides, remove from the pan and slice into pieces.
- Serve:
- Serve hot as a snack or a meal, paired with a dipping sauce, or filled with your favorite ingredients like eggs, meats, or vegetables.
Shouzhua Bing is irresistibly crispy on the outside while soft and layered inside, making it a delicious treat for any time of day. Enjoy!
